The Rajasthani palate is influenced by the maharaja/warrior culture as well as the patchy availability of ingredients in this water starved region. The cuisine is predominantly vegetarian and dazzling in its variety. The spice content is on the higher side, even by Indian standards. The most popular dishes served in this cuisine are Dal, Bati, Churma, Gutte Ki Subzi, to name a few. Food is most often very spicy and a lot of emphasis is given to vegetarian cooking. There is an enormous variety of chutneys & sweet dishes available. Steamed Batis are also very popular. Batis are accompanied by Panch Kutti Dal and Churma. The dal (lentil curry) is cooked with ghee and Indian masalas are added to it before serving.
